Microwave Corn with Herb Yogurt

This Microwave Corn On The Cob With Herb Yogurt Sauce is a quick and flavorful side dish perfect for summer. The sweet corn paired with a creamy, herby yogurt sauce creates a delightful contrast that elevates this classic dish.

Ingredients

Scale
  • 4 ears of fresh corn on the cob, husked and cleaned
  • 1 tablespoon of butter (optional)
  • Salt to taste
  • Freshly ground black pepper to taste
  • 1 cup plain Greek yogurt
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh chives, chopped
  • Salt to taste
  • Freshly ground black pepper to taste

Instructions

  1. Start by husking the corn: Remove the outer green husk and silky threads from each ear of corn. Rinse them thoroughly under cold water to ensure they are clean.
  2. Place the cleaned corn ears in a microwave-safe dish. If desired, add a tablespoon of butter on top of each ear for extra flavor.
  3. Cover the dish with microwave-safe plastic wrap or a microwave-safe lid, leaving a small vent for steam to escape. This will help the corn cook evenly.
  4. Microwave on high for 4-5 minutes for two ears of corn, or 6-7 minutes for four ears. Listen for the popping sound of kernels; this indicates they are cooking well.
  5. Once the time is up, carefully remove the dish from the microwave using oven mitts. The steam will be hot, so be cautious. Let the corn sit for about 2 minutes to finish cooking in the residual heat.
  6. While the corn is resting, prepare the herb yogurt sauce. In a bowl, combine the Greek yogurt, lemon juice, olive oil, minced garlic, dill, parsley, and chives. Stir until well mixed and season with salt and pepper to taste.
  7. Once the corn has cooled slightly, use a sharp knife to cut the corn off the cob if desired, or serve it whole. Drizzle or spoon the herb yogurt sauce generously over the corn.
  8. Finish with an extra sprinkle of salt and freshly ground black pepper for seasoning. Enjoy your delicious microwave corn on the cob!

Keywords: Be careful not to overcook the corn in the microwave. Use fresh herbs whenever possible for the sauce, as dried herbs can lack the vibrant flavor that fresh ones provide.
