  • Filet Mignon Roast, about 2-3 pounds
  • Fresh garlic cloves

  • Extra virgin olive oil, 1 tablespoon

Instructions

  1. Take the filet mignon roast out of the refrigerator about 30-45 minutes before cooking to let it come to room temperature.
  2. Pat the roast dry with paper towels. Generously season all sides with salt and freshly cracked black pepper.
  3. Preheat your oven to 400°F (200°C).
  4. In a large oven-safe skillet, heat a tablespoon of olive oil over medium-high heat until shimmering.
  5. Carefully place the seasoned filet mignon roast in the pan. Sear for about 2-3 minutes on each side until a golden-brown crust forms. Make sure to sear the ends as well.
  6. Once seared, reduce the heat to medium. Add several smashed garlic cloves, fresh thyme, and rosemary to the pan. Pour in 3-4 tablespoons of unsalted butter.
  7. As the butter melts, use a spoon to baste the roast with the garlic butter for additional flavor. Do this for about 2 minutes.
  8. Place the skillet in the preheated oven. Roast for about 10-15 minutes for medium-rare, or until the internal temperature reaches 130°F (54°C).
  9. Once done, remove the skillet from the oven and transfer the roast to a cutting board. Let it rest for at least 10 minutes before slicing.
  10. Slice the roast into thick steaks and serve with the garlic butter drizzled over the top.
