  • 1/2 cup green onions, chopped (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C). This ensures your casserole cooks evenly and thoroughly.
  2. In a large skillet over medium heat, brown the ground beef for about 5-7 minutes, breaking it apart with a spatula. You’ll know it’s ready when there’s no pink left. Avoid overcrowding the pan; if you have a lot of meat, do it in batches.
  3. Add the diced onion and minced garlic to the skillet, cooking for an additional 3-4 minutes until the onions are translucent. Stir frequently to prevent the garlic from burning.
  4. Stir in the black beans, corn, and diced tomatoes with green chilies. Cook for another 2-3 minutes until heated through. This mixture should be vibrant and aromatic.
  5. Sprinkle in the ranch dressing mix, chili powder, cumin, and season with salt and pepper. Stir well to combine everything, letting it cook for another minute for the spices to infuse.
  6. In a large bowl, combine the beef mixture with cooked rice and sour cream. Mix until everything is evenly coated. If the mixture feels too dry, add a little more sour cream.
  7. Transfer the mixture to a greased 9×13 inch baking dish. Spread it out evenly with a spatula.
  8. Top with the shredded cheddar cheese and Monterey Jack cheese. Bake in the preheated oven for 20-25 minutes or until the cheese is bubbly and slightly golden. Keep an eye on it to avoid over-browning.
