  • 1 egg
  • 1 cup panko breadcrumbs
  • 1/2 onion, minced
  • 2 cloves garlic, minced
  • 12 fresh jalapeños or serranos, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp Mexican oregano
  • 23 chipotle peppers in adobo sauce, minced
  • 1 can crushed tomatoes or fire-roasted diced tomatoes
  • 1 cup beef broth
  • 1/2 cup non-alcoholic beer (or extra beef broth)
  • Juice of 1 lime
  • Salt and freshly ground black pepper to taste
  • Fresh cilantro, chopped (for garnish)
  • Cooking oil (like canola or vegetable oil)

Instructions

  1. Prep Your Ingredients: First things first, get everything ready. Finely mince your onions, garlic, and fresh chiles. Open your cans of tomatoes and broth. Having everything prepped makes the cooking process smooth and enjoyable.
  2. Craft the 'Donkey Balls': In a large mixing bowl, combine the ground beef, the single egg, breadcrumbs, about half of your minced onion and garlic, the minced jalapeño (or serrano), cumin, chili powder, smoked paprika, and Mexican oregano. Using your hands, mix gently until just combined. The key here is not to overmix, as this can lead to tough meatballs. We want our Spicy Mexican Donkey Balls to be tender and juicy!
  3. Form Your Balls: Take a generous portion of the meat mixture and roll it between your palms to form golf-ball sized spheres. Place them on a plate as you form them.
  4. Sear for Flavor: Heat a couple of tablespoons of your preferred cooking oil in a large, heavy-bottomed skillet or Dutch oven over medium-high heat. Once hot, carefully place the formed 'Donkey Balls' into the skillet, making sure not to overcrowd it. Sear them on all sides until nicely browned. Remove the seared balls from the skillet and set them aside.
  5. Build the Fiery Sauce: Reduce the heat to medium. In the same skillet, add the remaining minced onion and garlic, along with the minced chipotle peppers and a tablespoon or two of their adobo sauce. Sauté for 3-5 minutes until the aromatics are softened and fragrant. Stir in a teaspoon each of cumin and chili powder, and half a teaspoon of smoked paprika, cooking for another minute until fragrant.
  6. Sauce It Up: Pour in the crushed tomatoes, beef broth, and the non-alcoholic beer (or extra beef broth). Add a good squeeze of fresh lime juice and season generously with salt and freshly ground black pepper to taste. Stir everything together and bring the sauce to a gentle simmer.
  7. Simmer to Perfection: Gently return the seared Spicy Mexican Donkey Balls to the simmering sauce. Cover the skillet and let them simmer gently for 20-25 minutes, or until the balls are cooked through and the sauce has thickened beautifully.
  8. Finish and Serve: Just before serving, stir in a generous handful of fresh, chopped cilantro. Serve your amazing Spicy Mexican Donkey Balls piping hot, perhaps over fluffy rice, with warm corn tortillas for scooping.
