  • Full-fat coconut milk

Instructions

  1. Start by cutting your beef into 1.5-inch cubes. Pat them dry with a paper towel, then season with salt and pepper.
  2. In a large skillet over medium-high heat, add a tablespoon of oil. Sear the beef cubes in batches until browned on all sides. This step is optional but adds a depth of flavor to your curry.
  3. In the same skillet, add another splash of oil if needed, and toss in the chopped onions. Sauté until translucent, then add in the minced garlic and ginger. Cook for an additional minute until fragrant.
  4. Stir in the cumin, coriander, turmeric, garam masala, and red chili powder. Cook for about 30 seconds to toast the spices slightly.
  5. In your slow cooker, add the seared beef, sautéed onion mixture, tomato paste, carrots, and potatoes. Pour in the coconut milk and beef broth, stirring gently to combine everything.
  6. Cover and set your slow cooker on low for 6-8 hours or high for 4-5 hours. The longer, the better for tenderness!
  7. Once the cooking time is up, check the beef for tenderness. It should fall apart easily. Taste the sauce and adjust seasoning with salt or additional spices as desired.
  8. Serve the curry hot, garnished with fresh cilantro, alongside steamed basmati rice or warm naan for a complete meal.
