  • Baking Soda

  • Buttermilk

  • Peach Extract
  • Fresh Peaches (peeled, pitted, and diced)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan, or line it with parchment paper.
  2. In a medium bowl, whisk together the flour, both sugars, and cinnamon for the crumb topping. Add the cold, cubed unsalted butter and cut it into the dry ingredients until the mixture resembles coarse crumbs.
  3. Peel, pit, and dice your fresh peaches into roughly ½-inch pieces. If using frozen, thaw them completely and pat them very dry.
  4. In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt for the cake base.
  5. In a separate large bowl, cream the softened unsalted butter and granulated sugar together on medium speed until light and fluffy.
  6. Beat in the large eggs one at a time, mixing well after each addition. Stir in the vanilla extract and peach extract.
  7. With the mixer on low speed, gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk.
  8. Gently fold the diced peaches into the cake batter by hand using a spatula.
  9. Pour the peach cake batter evenly into your prepared baking pan. Sprinkle the chilled crumb topping generously over the top.
  10. Bake for 45-55 minutes, or until a wooden skewer or toothpick inserted into the center comes out clean.
  11. Once baked, remove the cake from the oven and let it cool in the pan on a wire rack for at least 20-30 minutes before slicing and serving.
