  • 1 pound boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon chipotle in adobo sauce, minced (adjust based on spice preference)
  • For the Chipotle Ranch Sauce:
  • 1/2 cup ranch dressing
  • 1 tablespoon chipotle in adobo sauce, minced
  • 1 teaspoon lime juice
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Toppings:
  • 1 cup shredded cheddar cheese
  • 1 cup shredded lettuce
  • 1 medium tomato, diced
  • 1/4 cup sliced green onions
  • Fresh cilantro, for garnish (optional)

Instructions

  1. In a mixing bowl, combine 2 cups all-purpose flour, 1 teaspoon baking powder, and 1 teaspoon salt. Whisk until evenly mixed.
  2. Gradually add 3/4 cup warm water and 2 tablespoons olive oil to the dry ingredients. Mix until a soft dough forms. Knead for about 2-3 minutes until smooth. Avoid over-kneading, as this can make the flatbread tough.
  3. Divide the dough into 4 equal pieces. Roll each piece into a ball and then flatten it into a disc about 1/4 inch thick. You want them to be even to cook properly.
  4. Heat a non-stick skillet over medium heat. Once hot, place a flatbread in the skillet. Cook for 2-3 minutes on each side, or until golden brown and puffed. Keep an eye on them to avoid burning.
  5. While the flatbreads are cooking, prepare the chicken. In a bowl, mix together 1 teaspoon smoked paprika, 1 teaspoon garlic powder, 1/2 teaspoon cumin, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
  6. Cut the chicken breasts into bite-sized pieces and coat them with 2 tablespoons olive oil, followed by the spice mixture. Ensure that each piece is evenly coated.
  7. In the same skillet, add the seasoned chicken over medium-high heat, cooking for about 6-8 minutes until fully cooked and no longer pink inside. Stir occasionally to ensure even cooking.
  8. While the chicken cooks, prepare the chipotle ranch sauce by mixing 1/2 cup ranch dressing, 1 tablespoon minced chipotle in adobo sauce, 1 teaspoon lime juice, and 1/2 teaspoon garlic powder in a bowl. Season with salt and pepper to taste.
  9. Once the chicken is cooked, remove it from heat. Assemble your flatbreads by spreading a layer of chipotle ranch sauce on each, followed by the cooked chicken.
  10. Top with 1 cup shredded cheddar cheese, 1 cup shredded lettuce, 1 medium diced tomato, and 1/4 cup sliced green onions. Garnish with fresh cilantro and serve with lime wedges.
