  • 1 cup raw cashews
  • 1/2 cup creamy cashew butter
  • 1/4 cup pure maple syrup
  • 1/4 cup Medjool dates, pitted (about 3-4)
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1 cup freeze-dried strawberries, crushed
  • 1/4 cup white chocolate chips
  • 1 tsp coconut oil

Instructions

  1. In a food processor, add 1 1/2 cups of rolled oats and 1 cup of raw cashews. Pulse them together until they form a fine, flour-like consistency. This should take about 1-2 minutes. Avoid over-processing to prevent the nuts from turning into butter.
  2. Incorporate 1/4 cup of pitted Medjool dates into the processor. Pulse a few times until the dates are finely chopped and evenly distributed throughout the mixture. This adds natural sweetness and stickiness; about 30 seconds should suffice.
  3. Add 1/2 cup of creamy cashew butter, 1/4 cup of pure maple syrup, 1 tsp of vanilla extract, and 1/4 tsp of salt to the processor. Blend on low speed until a sticky dough forms. If it’s too dry, a tablespoon of water can help; this should take about 1-2 minutes.
  4. Transfer the sticky dough to a mixing bowl. Sprinkle in 1 cup of crushed freeze-dried strawberries and mix until the berries are evenly distributed. You want to see bits of strawberry throughout the dough.
  5. Using a 2-tablespoon cookie scoop or your wet hands, scoop and roll the dough into small balls (about 1-inch in size). Arrange them on a parchment-lined tray, ensuring space between each bite to prevent them from sticking together.
  6. Place the tray in the freezer for 20-30 minutes. This is crucial for firming up the bites, making them easier to handle. They should feel solid but not frozen hard.
  7. In a microwave-safe bowl, combine 1/4 cup of white chocolate chips and 1 tsp of coconut oil. Melt in 30-second increments, stirring between each round until smooth, which should take about 1 1/2 minutes total. Be careful not to overheat, or the chocolate will seize.
  8. Remove the energy bites from the freezer. Use a spoon to drizzle the melted white chocolate over each one. While the chocolate is still wet, sprinkle additional crushed freeze-dried strawberries on top for extra flavor and a pop of color.
  9. Place the bites back in the fridge for a few minutes to allow the chocolate to set. Once the chocolate is firm, transfer them to an airtight container. You can store half in the fridge for immediate snacking and the other half in the freezer for longer storage (up to 3 months).
