Ingredients

Scale
  • 8 oz beef bacon
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 4 cups beef broth
  • 1 cup whole milk
  • 1/2 cup heavy cream
  • 1 lb potato gnocchi
  • 1 1/2 cups sharp cheddar cheese, grated
  • Salt, to taste
  • Black pepper, to taste
  • 1 pinch smoked paprika
  • 1 dash Worcestershire sauce
  • Fresh parsley or chives, for garnish

Instructions

  1. In a large heavy-bottomed pot or Dutch oven, cook the beef bacon over medium heat until it’s crispy, about 8-10 minutes. Remove the bacon with a slotted spoon and set it aside on a paper towel-lined plate to drain. Reserve about 2 tablespoons of the rendered beef bacon fat in the pot.
  2. Add the chopped onion to the pot with the reserved beef bacon fat. Sauté over medium heat for about 5-7 minutes, until the onion is softened and translucent. Stir in the minced garlic and cook for another minute until fragrant.
  3. Sprinkle the all-purpose flour over the sautéed onions and garlic. Stir constantly for 1-2 minutes, cooking out the raw flour taste to create a roux.
  4. Gradually pour in the beef broth, whisking continuously to prevent lumps. Bring to a gentle simmer, allowing it to thicken slightly. Slowly whisk in the milk and heavy cream, continuing to simmer gently for about 5 minutes.
  5. Carefully add the potato gnocchi to the simmering soup. Cook according to package directions, usually just 2-3 minutes, until the gnocchi float to the surface and are tender.
  6. Remove the pot from the heat. Stir in the freshly grated sharp cheddar cheese until it’s completely melted and smooth. Season the soup with salt, black pepper, smoked paprika, and Worcestershire sauce. Adjust seasonings as needed.
  7. Ladle the hot soup into bowls and garnish with the crumbled crispy beef bacon and a sprinkle of fresh chopped parsley or chives. Enjoy immediately!

Keywords: Don’t overcook the gnocchi as they can become gummy. Grate your own cheese for the best melt and flavor. Adjust the thickness of the soup by adding more broth or milk if necessary.
