Instructions

  1. In a small saucepan, combine 2 cups of your chosen pear juice (or homemade pear puree if you're going that route) with 2 cinnamon sticks, 2-3 whole star anise pods, and 5-6 whole cloves. Add 2 tablespoons of your chosen sweetener (maple syrup or agave nectar works beautifully here). Give it a gentle stir to combine.
  2. Place the saucepan over medium heat. Bring the mixture to a gentle simmer, just until you see small bubbles forming around the edges. Reduce the heat to low, cover the saucepan, and let it simmer very gently for about 10-15 minutes.
  3. Once infused, remove the saucepan from the heat. Let the spiced pear base cool completely to room temperature. Strain the mixture through a fine-mesh sieve into a clean pitcher or jar, discarding the whole spices.
  4. Stir in 1 to 1.5 teaspoons of vanilla extract or vanilla bean paste into the cooled, strained spiced pear base. Taste and adjust the vanilla if you desire a stronger presence.
  5. To assemble a single mocktail, fill a tall glass or a rocks glass with ice. Pour about 1/4 to 1/3 cup of your spiced pear and vanilla base over the ice.
  6. Gently top the spiced pear and vanilla base with about 1/2 to 3/4 cup of chilled sparkling water or ginger ale. Give it a gentle stir with a spoon to combine the layers without losing too much of the fizz.
