  1. Start by seasoning the chuck roast. In a small bowl, mix together the salt, black pepper, garlic powder, onion powder, smoked paprika, and dried thyme. Rub this spice blend all over the roast, ensuring it's evenly coated. This step takes about 5 minutes and is crucial for building flavor.
  2. Heat a large skillet or Dutch oven over medium-high heat and add the olive oil. Once the oil is shimmering (about 2 minutes), carefully place the seasoned chuck roast in the pan.
