  • 2 cups fresh strawberries, hulled and sliced
  • 1 tablespoon lemon juice (freshly squeezed)
  • 12 tablespoons honey or agave syrup (adjust based on sweetness)
  • 1 cup mixed fresh fruit, diced (e.g., kiwi, pineapple, blueberries, or additional strawberries)

Instructions

  1. Start by preparing the watermelon layer. In a blender, combine 4 cups of cubed watermelon with 1 tablespoon of freshly squeezed lime juice and 1 tablespoon of honey (if using). Blend until smooth, about 30 seconds. It should look like a vibrant pink puree without any chunks.
  2. Next, prepare the strawberry layer. In the same blender (no need to wash it out), add 2 cups of hulled and sliced fresh strawberries. Pour in 1 tablespoon of freshly squeezed lemon juice and adjust sweetness with 1-2 tablespoons of honey, depending on your preference. Blend until smooth, which should take about 30 seconds. The mixture should be bright red and slightly thick.
  3. Now, grab your popsicle molds. Begin by pouring a layer of the watermelon puree into each mold, filling them about halfway. Tap the mold gently on the counter to eliminate any air bubbles. Freeze for about 1-2 hours or until the layer is firm to the touch.
  4. While the watermelon layer is freezing, prepare the mixed fruit chunks. Dice your choice of fruits into small pieces, ensuring they are bite-sized. Once the watermelon layer is firm, take the molds out of the freezer and evenly distribute the diced fruit into each mold.
  5. Carefully pour the strawberry puree over the fruit chunks, filling each mold to the top. Use a stick or spoon to gently stir the layers together, but don’t overmix; you want the layers to remain somewhat distinct.
  6. Insert the popsicle sticks into the molds and return them to the freezer. Freeze for at least 4-6 hours or until completely solid. You’ll know they’re ready when they feel frozen solid and you can’t see any liquid when you jiggle them.
  7. When ready to serve, run warm water over the outside of the molds for 10-15 seconds to help release the popsicles. Gently pull on the sticks to remove them. Enjoy your refreshing watermelon popsicles immediately!
